This standard describes the determination of reduced ascorbic acid in fruits, vegetables and their processed products using the 2,6-dichloroindophenol Titrimetric method. The method is not suitable for dark samples and does not include divalent iron, divalent tin, monovalent copper, sulfur dioxide, sulfite or thiosulfate. The determination principle is based on the Color change of 2,6-dichloroindophenol under different oxidation reduction states. Its light red appearance in acidic media is used to judge the titration endpoint, so as to calculate the content of ascorbic acid in the sample.
